Directions
- Cut the duck into pieces and brown it without any added fat in a large pot. ≈ 8 min
- Chop the carrots, onion and garlic into small pieces, then add them to the duck. ≈ 8 min
- Add the salt, pepper, sugar, anisette, vanilla extract, thyme and bay leaf to the duck. ≈ 3 min
- Split the vanilla beans open and add them to the pot. ≈ 3 min
- Add the chopped tomatoes and let it reduce a little.
- Add 2 glasses of water, cover and cook for 1 hour.
- At the end of cooking, uncover the pot and reduce the cooking juices completely.
