A variation of the central Kalimantan version of Banjare sour soup, featuring a less liquid sauce and green beans.
“Gangan Asam Kering” is a typical version of the Banjare sour soup from central Kalimantan. It is distinguished by a thicker sauce than the traditional version from Banjarmasin.

Directions
- Chop the spices. ≈ 8 min
- Except for the lime, which should be roughly chopped, the galangal and lemongrass leaves should be finely chopped. ≈ 3 min
- The fish are cleaned, then cut into pieces, and mixed with spices. ≈ 3 min
- All the vegetables are washed, and then chopped. ≈ 3 min
- Boil the vegetables first, then add the fish, spices, and coconut.
- Cook all the ingredients until they are cooked through.
