Double chocolate cheesecake
A double chocolate cheesecake, creamy and rich, on a cocoa biscuit base and decorated with melted white chocolate: best prepared the day before.
This creamy cheesecake combines dark chocolate in the filling and white chocolate for decoration, on a cocoa biscuit base. It requires a long chilling time.

Directions
Crust
- Combine the crushed biscuits and melted butter. ≈ 4 min
- Press this mixture onto the bottom and up 4.5 cm on the sides of a 23 cm springform pan. ≈ 3 min
Device
- In a large mixing bowl, beat together the cream cheese, sugar, chocolate, flour, and vanilla until you have a smooth mixture. ≈ 4 min
- Add the eggs all at once and beat with an electric hand mixer on a low speed, just enough to incorporate them, without overmixing. ≈ 4 min
- Add the milk, then pour the mixture over the crust. ≈ 4 min
Cooking and resting
- Bake at 175 °C for approximately 50 minutes, or until the center appears set when you gently shake the pan.
- Let it cool for 5 to 10 minutes on a wire rack.
- Carefully remove the cake from the mold and let it cool for another 30 minutes.
- Remove the circle from the mold, cover, and refrigerate for 4 to 24 hours.
- Before serving, decorate with melted white chocolate. ≈ 2 min
