Dhokla, a steamed rice and black lentil cake
Dhoklas are steamed cakes from Gujarat, made with fermented rice and black lentils. They are soft, slightly tangy, and have a ginger flavor.
Dhokla is a snack from the state of Gujarat, made with black lentils. It should not be confused with khaman, which is made from chickpea flour. It is typically served as a side dish and has a slightly sour and sweet flavor.

Directions
- Cook the rice and lentils in a pan over medium heat for 4 to 5 minutes.
- Let it cool, then grind it into a coarse powder and pour it into a mixing bowl.
- Add the yogurt and lukewarm water to the powder. Mix well to prevent lumps, until you have a smooth paste. ≈ 4 min
- Add the salt and let it ferment for 8 to 10 hours.
- Prepare a dough using ginger and green chili peppers. ≈ 3 min
- After fermentation, incorporate this dough into the mixture. ≈ 4 min
- Grease a dhokla dish, a plate, or a mold. ≈ 3 min
- Boil some water in the steamer.
- Set aside half of the dough. ≈ 3 min
- In a small bowl, mix 1/4 teaspoon of baking soda, 1/2 teaspoon of oil paint, and 1/2 tablespoon of lemon juice. Add this mixture to the dough and mix well. Repeat this process with the remaining dough just before baking.
- Pour: Pour the risen dough into the oiled container and steam for 8 to 10 minutes. Check with the edge of a knife: it should come out clean.
- Garnish with cilantro and serve hot with a green chutney. ≈ 2 min
