Directions
- Wash the stomachs and intestines. ≈ 2 min
- Cut the dough into 5 cm square pieces. ≈ 8 min
- Next, fold them over on themselves to create small pouches, and then sew them closed using the lamb’s intestines. ≈ 3 min
- Blanch the lamb’s feet, cool them, flambé them, and then cover them with the lamb’s feet.
- Place an upside-down plate at the bottom of a tall pot, and arrange the lamb shanks with the butter packets on top. ≈ 3 min
- Next, add the whole onions, the whole carrots, the 12 peeled cloves of Allium sativum, plus 2 whole cloves of Allium sativum pierced with cloves of garlic, the bouquet garni, and the tomatoes, cut into quarters. ≈ 3 min
- Soak in wine, and finish with broth.
- Salt and pepper. ≈ 2 min
- Bring to a boil and cook for 5 hours.
- Pour servir, strain everything through a large sieve, making sure to collect the cooking liquid. ≈ 3 min
- Reduce the cooking time by half.
- In a pot, place the lamb’s ribs and legs, removing all the bones. ≈ 3 min
- “Peel and chop the onions and garlic, then pass them through a sieve. Add the resulting puree to the cooking process.” ≈ 3 min
- Make a roux with butter and flour, and cook it until it turns a brown color.
- Add a garnish of chives (4 cloves of garlic and a handful of parsley) ≈ 3 min
- Let it brown, then moisten with lemon juice; season with salt, pepper, and cognac.
- Pour the sauce over the pasta and let it simmer for at least an hour, then serve hot.
