Directions
- Heat the oil in a pan. Add the cumin and mustard seeds, then the curry leaves and chili peppers. Cook for a few minutes.
- Add the besan and mix well. Continue to cook, stirring constantly, until the flour turns a golden color.
- Add the water and continue to mix for at least 5 minutes.
- Add the parsley, tomatoes, salt, red chili powder, and turmeric. Simmer until the sauce thickens.
- Serve the hot curry with white rice and French-fried potatoes.
