Directions
- Cut the pork shoulder into large cubes (12 to 15 pieces). ≈ 8 min
- Peel the onion and chop it into small pieces. ≈ 8 min
- Finely chop the celery. ≈ 8 min
- Heat the oil paint and butter in a saucepan.
- First, return the pieces of meat to the pan. ≈ 3 min
- Salt and pepper. ≈ 2 min
- Add the chopped onion, celery, sage leaves, bay leaf, and thyme. ≈ 3 min
- Stir with a wooden spoon and simmer gently. ≈ 4 min
- Sprinkle with flour, stir again, and mix with the white wine (and optionally, some water). ≈ 4 min
- Cover the pot and let it simmer over low heat.
- After 1 hour and 30 minutes, remove the meat and keep it separate in a warm place.
- Add the chopped capers and pickles to the pot. ≈ 3 min
- Once the sauce has cooled, mix it with the egg yolks. ≈ 4 min
- Adjust the seasoning. ≈ 2 min
- Coat the meat pieces with sauce and serve very hot. ≈ 2 min
