A light curry made with potatoes, apples, and eggplants.
A Bangladeshi dish: fried eggplant and mashed potatoes in a light sauce made with panch phoron, onion, garlic, spices, and green chili peppers.
You can find eggplant all year round in Bangladesh, but this dish is particularly delicious when made with winter eggplants. It requires very little oil and spices; simply sauté the masala until it’s nicely browned.
