Directions
- Preheat the oven to 90 degrees Celsius.
- Cut the vanilla beans in half and scrape out the seeds into a bowl. ≈ 8 min
- Cook the corn kernels with the beans, cream, and milk.
- Combine the egg yolks with the sugar. ≈ 4 min
- Heat the milk and then mix it with the egg yolks and sugar, making sure the mixture is not too hot.
- Pour servir, pour in cups made of copper or in small molds. ≈ 3 min
- Place the base of the mold in the oven for approximately 90 minutes, until the cream has set.
- Before serving, sprinkle about a teaspoon of sugar (or coconut sugar) into each cup and heat them gently with a gas burner until the sugar melts and takes on a golden color.
