Vanilla biscuit pudding
A Basque madeleine pudding made with vanilla-infused milk and eggs, baked in a water bath and unmolded cold, to be topped with custard or fruit.
This biscuit pudding is made with milk infused with vanilla or cinnamon, eggs, and madeleines. It is baked in a water bath and unmolded once it has cooled completely. Serves 6.

Directions
- Boil the vanilla or cinnamon with the milk for 5 minutes.
- If you are using vanilla, open the pod in half with the tip of a knife, scrape out the seeds, and add everything to the warm milk; boil for another minute and then let it cool.
- Prepare or buy madeleines or a soft cake. ≈ 3 min
- In a mixing bowl, beat the eggs with the sugar, then mix in the filtered milk. ≈ 4 min
- Grease and sugar the pudding mold. ≈ 3 min
- Place the cookies at the bottom of the baking pan. ≈ 3 min
- Soak them in a mixture of egg and milk, and allow them to absorb it thoroughly. ≈ 3 min
- Bake in a water bath at 170 °C for 45 minutes; a knife inserted into the pudding should come out clean.
- Remove from the oven and allow to cool completely before using a knife to carefully separate it from the pan.
