Directions
- The cod is unwrapped and kept in water for 36 hours, with the water changed every 12 hours. It is then drained, the bones are removed, and the fish is cut into pieces.
- In a pan with olive oil, the finely chopped onion is sautéed until it is lightly golden.
- Garlic and chopped fresh herbs are added to the pan and simmer for a few minutes.
- The cod is coated in breadcrumbs and added to the pan along with the onion and garlic mixture. Espelette pepper and white wine are also added.
- The entire mixture is poured into an oven-safe dish and left to bake for approximately 15 minutes.
- The dish is served with hard-boiled eggs cut into quarters and strips of red peppers from the Bierzo region. ≈ 2 min
