Directions
- We select a high-quality cod, one that is as white and flavorful as possible. ≈ 3 min
- To remove the salt, it needs to be soaked in water for 24 to 36 hours, changing the water several times.
- It is peeled, cut into regular pieces, and then placed in a pot with cold water. ≈ 3 min
- As soon as the water begins to boil, it is removed and allowed to cool in the broth.
- Once cooked this way, the cod breaks apart easily, making it simple to remove the skin and bones. ≈ 3 min
- Then, it is placed in a blender (or a food processor, a mortar, etc.) ≈ 3 min
- We begin by mashing the cod, adding a little oil paint and a few spoonfuls of the sauce it was cooked in, until we achieve a firm, smooth paste. ≈ 4 min
- Next, pour the mixture into a bowl and work with a wooden spoon over very low heat, until all the oil paint is fully incorporated.
- Then, the cream, lemon juice, and a pinch of white pepper are added, and the seasoning is adjusted as needed. ≈ 2 min
- It is served hot, accompanied by toast or small, fried bread seasoned with garlic. ≈ 2 min
