Directions

  1. Melt the chocolate with the milk over a double boiler.
  2. Separate the egg whites from the egg yolks. ≈ 2 min
  3. Whip the egg whites until stiff peaks form. ≈ 4 min
  4. Add the egg yolks to the melted chocolate, outside of the bain-marie, and mix. ≈ 4 min
  5. Combine one-third of the whipped cream with the chocolate. ≈ 4 min
  6. Gently fold in the remaining egg whites using a large spoon. ≈ 4 min
  7. Pour une ou plusieurs portions, place in containers and refrigerate for two hours.
