Directions

  1. Preheat the oven to 175 °C.
  2. Line the bottom of the pan with parchment paper. You may also grease the sides. ≈ 3 min
  3. Melt the butter and chocolate together until you have a smooth mixture. The easiest method is using the microwave: heat in 30-second intervals, stirring each time, until everything is almost melted. Let it sit for a few minutes to allow the heat to finish melting, then stir one last time.
  4. Place the sugar and eggs in a large mixing bowl and whisk briefly. ≈ 4 min
  5. Pour the chocolate-butter mixture over the sweetened eggs, whisking until a smooth and even batter forms, without incorporating any air. ≈ 4 min
  6. Pour, pour into the mold, then cover the mold with aluminum foil. ≈ 3 min
  7. Place the mold in a larger baking dish. Carefully pour very hot, even boiling, water into the dish until it reaches a depth of about 2.5 cm. ≈ 3 min
  8. Place the entire mixture in the oven and bake for approximately 75 to 90 minutes, or until the cake is set and the surface is almost dry.
  9. To check if the cake is cooked, remove the cake and its water bath, then remove the aluminum foil. The surface may have small imperfections, which is normal. ≈ 3 min
  10. Remove the mold from the water bath and allow the cake to cool completely. Cover it with plastic wrap, then place it in the refrigerator for at least 3 hours, or preferably overnight.
  11. To serve, let the cake sit at room temperature for 30 minutes. Use a knife to loosen the edges of the cake, then flip it onto a serving plate and remove the parchment paper.
