Chickpea salad with goat cheese and cilantro
A chickpea salad featuring cilantro, goat cheese, parsley, red onion, garlic, dried chili peppers, and chives, seasoned with oil and lemon.
Cilantro is the defining ingredient of this salad; it’s essential, and the herbs are used in much larger quantities than usual. The goat cheese, added at the last minute, retains its shape.
