Chalupas are a Mexican specialty, originating in the states of Guerrero and Oaxaca. They consist of crispy corn tortillas topped with various ingredients. In this recipe, we will prepare American-style chalupas, which are flat but retain the authentic flavor of this delicious dish.

Directions
- Heat the vegetable oil in a small pan. Pour about 1.25 cm of oil into the pan. Check that the oil is at the correct temperature by adding a small piece of tortilla. The oil should start to foam, and the tortilla should become crispy quickly.
- Fry each tortilla completely flat, on both sides, until it is nicely crispy. Drain the French-fried tortillas and keep them warm on a plate lined with paper towels or newspaper, in a preheated oven.
- Spread a layer of kidney beans evenly over each tortilla, about 0.6 cm thick. Top with a generous amount of grated queso fresco and about 1 tablespoon of chopped onion. ≈ 4 min
- Place the assembled chalupas on a griddle and cook them over the heat until the cheese melts and begins to bubble. Watch carefully to prevent them from burning. ≈ 3 min
- Garnish with chopped lettuce and tomato pieces, then serve immediately. ≈ 10 min
