Seafood fideua with garlic
This paella-style fideuà with squid, golden vermicelli, and red broth is a flavorful, tender, and comforting dish, ready in just 40 minutes.
Fiueida is similar to paella, but instead of rice, it uses thin pasta. In this version, the vermicelli are first grilled to achieve a nice color, then cooked in a red broth with squid, tomatoes, and a mixture of garlic, walnuts, and parsley.

Directions
- Bake the vermicelli in the oven or in a pan with a little bit of sunflower oil.
- In a paella pan, pour in the olive oil and add the sliced garlic.
- Once the garlic starts to turn golden, add the onion first, followed by the pepper.
- Once they start to cook, add the squid and let everything cook until it is thoroughly dry.
- Then add the tomato and cook until it starts to caramelize.
- Add the broth and, once it comes to a boil, add the vermicelli.
- Cook for 4 minutes over medium heat.
- In a mortar, combine the chopped garlic, walnuts, and parsley with the brandy, then pour this mixture into the pan.
- Cook for another 3 minutes.
- Let it rest for about 2 minutes, then serve.
