Flamenco-style eggs are a classic Spanish dish: typically served in a small ramekin, they feature a bed of tomato sauce, chorizo, bacon, green peas, and a hard-boiled egg cut in half. They are usually served with grilled bread.

Directions

  1. Take 4 individual terracotta ramekins. ≈ 3 min
  2. Spread the tomato sauce evenly over the bottom of the dish. ≈ 3 min
  3. Place the chorizo and bacon in a pan, then distribute them evenly on the sides of the ramekins.
  4. Arrange the green peas on one side and cover them with the ground apples. ≈ 3 min
  5. Crack an egg in the middle. ≈ 3 min
  6. Cook over low heat, covered, for a few minutes, until the whites are set.
  7. You can also bake the ramekins in the oven, making sure that the white part is cooked and the yolk is still runny.

  • 150 g of French-style potato fries
