Directions
- Heat the vegetable oil in a small frying pan. Pour about 1.25 cm of oil into the pan. Check that the oil is at the correct temperature by adding a small piece of tortilla. The oil should start to bubble and the tortilla should become crispy quickly.
- Fry each tortilla completely flat, on both sides, until it is nicely crispy. Drain the French-fried tortillas and keep them warm on a plate lined with paper towels or newspaper, in a preheated oven.
- Spread a layer of kidney beans evenly over each tortilla, about 0.6 cm thick. Top with a generous amount of grated queso fresco and about 1 tablespoon of chopped onion. ≈ 4 min
- Place the assembled fritters on a baking tray and bake them under the broiler until the cheese melts and begins to bubble. Watch carefully to prevent them from burning. ≈ 3 min
- Garnish with chopped lettuce and tomato pieces, then serve immediately. ≈ 10 min
