Chakarai Pongal is a creamy and sweet Indian dessert, traditionally served during the Makar Sankranti festival. This recipe combines rice and black lentils to create a delicious pudding.

Directions

  1. Cook the rice and dhal together with water in a pot or pressure cooker until they are tender.
  2. Meanwhile, melt the cane sugar with 1 cup of water in a saucepan.
  3. Add the cardamom to the cane sugar, as it helps to dissolve it.
  4. Thoroughly mix the rice and lentils (paruppu) and add them to the pan containing cane sugar.
  5. Mix well and cook over low heat until the mixture thickens.
  6. Heat 4 tablespoons of ghee in a separate pan and add the cashew nuts, stirring until they are golden brown.
  7. Add the grapes and cook them for a few more seconds, or until they have puffed up.
  8. Add the walnuts and grapes to the pongal. ≈ 3 min
  9. Serve hot, with an extra portion of neyyi or ghee. ≈ 2 min

  • 120 ml of white rice
  • 120 ml of moong lentils
  • 960 ml of water
  • 1/4 cup of chopped cashews
  • 1/4 cup of white grape juice
  • 1 tablespoon of cardamom powder
  • 240 ml of ghee (or butter)
  • 3/4 cup of palm sugar
  • 1/4 cup of milk
