These Mardi Gras ears are perfect for celebrations. They are crispy and sweet, and can be made in just 60 minutes.

Directions
- Pour the oil paint into the Thermomix bowl and program for 3 minutes, using the Varoma function and speed 1.
- Add the orange and lemon peels and let simmer for an additional 3 minutes, at Varoma temperature, on slow speed 1.
- Then, add all the other ingredients, except the flour, and mix well for 20 seconds at speed 6. ≈ 4 min
- Finally, add half of the flour (325g) and mix for 30 seconds at speed 6. Add the remaining flour and program for 1 minute, at a pulsing speed.
- Form the balls and spread the dough, shaping it into the desired form, starting with the first ball you created. ≈ 10 min
- Fry the carnival ears in hot oil until they turn golden brown without burning. Use a fork to shape them into the form of an ear. If a deposit forms, strain the oil paint and make sure it’s plentiful. Do not cook them for too long.
- Arrange them in a pan, sprinkle with sugar and cinnamon (4 tablespoons of sugar for 1 tablespoon of cinnamon). In some regions of Galicia, they are covered with honey instead of the sugar-cinnamon mixture.
