Directions
- In a wide pan (it should be large enough to hold the pasta), heat the oil and add the garlic cloves and large pieces of cured meat.
- Add the hot pepper, chopped tomatoes, and eggplant, all cut into strips. ≈ 3 min
- Cook over high heat until the vegetables are tender and the tomato filaments are slightly dried.
- Pour the drained pasta (reserving a little of the cooking water) into the pan and mix with the sauce until it is well coated.
- Serve with a generous portion of goat cheese. ≈ 2 min
- Excellent recipe, but also adaptable to other types of pasta, whether short (fusilli, penne) or long (mafalde, long fusilli). ≈ 3 min
