Directions
- Wash the romaine lettuce, drain it, and tear it into bite-sized pieces. ≈ 2 min
- In a bowl, combine the anchovy paste, garlic, egg yolk, mustard, and lemon juice. Gradually add the olive oil while whisking to emulsify. Finish with Worcestershire sauce, salt, and pepper. ≈ 4 min
- Place the lettuce in a large salad bowl, pour over the dressing, and mix well. Add the croutons and Parmesan, then gently mix again. ≈ 4 min
- Arrange the salad in the plates and sprinkle with extra Parmesan, if desired. ≈ 2 min
