Directions
- Finely chop the Allium ascalonicum and lightly brown it in 2/3 of the butter. ≈ 8 min
- Peel the pumpkin, remove the seeds, and dice the pumpkin into small pieces. ≈ 8 min
- Add the pumpkin and rice, then continue to cook for a few more minutes. ≈ 3 min
- Add saffron, orange pulp, and rosemary to the rice, then pour in a little white wine or hot broth and mix until the liquid is absorbed.
- Add more broth and blend, mix, blend…
- Repeat until the risotto is creamy and slightly firm – Carnaroli rice is easier to work with in this case. ≈ 3 min
- Remove the rosemary sprig and mix the Fontina cheese with the remaining butter. ≈ 4 min
- Season with salt and pepper, then simmer covered for 5 to 10 minutes.
- Garnish with basil leaves and serve. ≈ 10 min
