Directions
- Let the butter come to room temperature. ≈ 3 min
- Boil the water with the sugar until you have a glucose syrup of a certain consistency.
- Combine the butter with the glucose syrup, stirring gently over low heat, until you achieve a creamy consistency.
- Whisk the eggs as if preparing an omelet, then add them gradually to the butter cream, to achieve a smoother texture. ≈ 4 min
- Continue to stir gently over low heat, using a wooden spoon.
- This cream is used as a base for other preparations: simply add different flavorings (a tablespoon of coffee and vanilla for a coffee cream, lemon or orange juice, cocoa…). ≈ 3 min
- Buttercream and its variations are often used as a filling or as a frosting for other desserts. ≈ 3 min
