Directions
- Remove the scales by starting with the gills. Make an incision around the entire fish, cut through the central spine, then remove the flesh while keeping the skin intact, attached to the head; cut the spines on the fins and tail to make the process easier. ≈ 8 min
- Clean the flesh, lightly poach it to separate it from the bones, then finely chop it, season it with salt, and brown it in a frying pan with the chopped onion. If the amount of flesh seems insufficient, add some from another type of river fish.
- Add the lightly ground peanuts, grapes, nutmeg, and a pinch of pepper to the mortar; if the peanuts are salted, add only a very small amount of salt. ≈ 2 min
- Garnish the skin of this fish and reshape it so that it appears whole. ≈ 10 min
- Grease it and bake it in the oven in a dish with a little oil and a glass of white wine, or grill it.
- Serve with sautéed wild mushrooms and a mushroom sauce. ≈ 2 min
