Directions
- Cook the buckwheat so that it remains in whole grains: pour it into twice its volume of hot, salted water, add butter (½ tablespoon per cup of buckwheat), and stir.
- Bring to a boil, then simmer gently, uncovered, over very low heat. After 15 minutes, turn off the heat and let it stand, covered, for 10 to 30 minutes.
- Cook the apples and mash them.
- Finely chop the onion and sauté it in a frying pan until softened.
- Combine the buckwheat, grated apple, and onion with the egg, starch, and flour. Add the chopped dill, salt, pepper, and thyme. ≈ 4 min
- Shape the patties, roll them in breadcrumbs, and fry them in a pan with oil until golden brown.
- Serve with a sauce made from plain yogurt, diced bell pepper, and cucumber. ≈ 2 min
