This cod is prepared Basque-style: the pieces are seasoned, coated in flour, dipped in egg, and then fried in oil infused with garlic. Keep an eye on the temperature to prevent the garlic from burning and the fish from drying out.

Directions

  1. Heat the oil paint in a pan over medium heat.
  2. Remove the garlic once it has started to turn color. ≈ 3 min
  3. Season the cod pieces and let them rest for 5 minutes.
  4. Dip the fish in flour, then in the beaten egg. ≈ 3 min
  5. Fry in a medium-heat pan on both sides.
  6. Remove the pieces from the pan before they become overcooked. ≈ 3 min
