Booyah (chicken and vegetable stew)
The Wisconsin Belgian specialty: a hearty stew of chicken and vegetables, slow-cooked for hours, perfect for a large group.
Booyah is a hearty stew from the Belgian-Wallonian region, originating in the northeastern part of Wisconsin. Traditionally cooked in large pots, it is often prepared during religious gatherings or picnics. Here is the recipe, passed down through four generations, as written by a descendant of the original creator.

Directions
- Place the chicken in a large pot, cover it with water, and let it simmer until it is cooked through. ≈ 3 min
- Remove the chicken from the broth and strain the broth to remove any fat.
- Add the green beans, carrots, green peas, cabbage, chopped celery, tomato sauce, onion, and, if desired, apples to the broth.
- Remove the skin and bones from the chicken, cut the meat into small pieces, and add it to the broth. Season with salt and add water to your liking.
- Cover and let simmer for at least 3 hours: the booyah tastes even better if cooked all day.
