Directions
- Peel the sweet potato, wash it, and dice it. ≈ 8 min
- Rinse again to remove any excess resin. ≈ 2 min
- Wipe clean with a dishcloth. ≈ 3 min
- Mix all the ingredients together, reserving a small amount of coconut to sprinkle on the doughnuts at the end. ≈ 4 min
- Line metal molds, similar to those used for making empanadas, with paper molds inside, and then place the dough in them. ≈ 3 min
