Two Dutch ways to serve meatloafs with an egg: either pan-fried alongside cooked meat, or coated in ground meat and then topped with tomato sauce.
The Dutch “bird’s nest” dish comes in two variations: either a meat dish with a fried egg on top, or a hard-boiled egg coated in ground meat and served in a tomato sauce.

Directions
Version with fried eggs
- Beat 2 eggs in a bowl and mix in the ground meat, chopped parsley, salt, pepper, and nutmeg. ≈ 4 min
- Melt the butter in a saucepan, then remove it from the heat.
- Create 4 small piles of meat in the pan and hollow out each one with a fork, creating a ring shape. Crack an egg in the center of each ring, making sure the yolk doesn’t spill onto the meat.
- Cook the nests over low heat until the whites are set.
- Arrange them on a preheated plate and serve with a sprig of parsley.
Version with hard-boiled eggs and tomato sauce
- Cook the quail eggs until they are slightly soft-boiled, then peel them.
- Spread the minced meat evenly around the eggs and then close the dish to ensure the eggs are fully coated. ≈ 3 min
- Coat them in breadcrumbs and place them in a buttered baking dish.
- Apply a thin layer of gold leaf to the ramekins, then remove them from the pan, leaving a small amount of butter behind.
- Add a little water to the butter, incorporate the tomato paste, and stir until you have a smooth sauce. ≈ 4 min
- Return the nests to the sauce and let them simmer for another minute. Serve with bread, sliced onions, and pickles.
