Directions

  1. Place the beans in a pot, add water and bring to a boil. Once boiling, drain the water and add the smoked Belgian endive, 1 chopped onion, 1 chopped carrot, bay leaves, pepper, and salt. Continue to cook.
  2. In a pan, chop 2 onions and sauté them in the oil. Once the onions are golden, add the tomato puree and cook for another 2 minutes.
  3. Once the beans are cooked and the water has reduced, transfer the contents of the pot to a large bowl to separate the smoked Belgian endive. In another bowl, chop the smoked Belgian endive into small pieces and add a small amount of water and salt.
  4. In a bowl, combine the chopped smoked Belgian endive with the haricots, and mix well. Place in the oven at 180 °C for approximately 30 minutes. Remove from the oven and serve with fresh parsley and cilantro as a garnish.
