Goulash originates from Hungary and is essentially a type of stew. The international term for goulash is “paprikás” or “pörkölt” in Hungary. Here is a basic recipe and some common variations.

Directions
Foundation
- Peel the onions. ≈ 8 min
- Sear the meat over high heat until it is browned on all sides.
- In the meantime, coarsely chop the onions, add them, and cook until they are translucent or golden brown, depending on your preference. ≈ 8 min
- Turn down the heat, add a pinch of salt and pepper (and paprika if you like), and cover the pot. Stir occasionally. If needed, deglaze with a quarter cup of water or a splash of wine, then add the remaining spices and, if desired, tomato paste. ≈ 4 min
- Cover and simmer over medium heat, while preparing the other ingredients (washing, peeling, chopping).
- Once the onions are softened, add the remaining ingredients for the goulash and mix well. ≈ 4 min
- Let it simmer gently over medium heat. Cover to retain more liquid, or leave uncovered to achieve a stronger flavor or a thicker sauce without adding a thickener.
- To thicken, mix the cornstarch or flour with a small amount of cold water, then add while stirring. If desired, add cream, and taste one last time. ≈ 4 min
- Season properly: peppercorns and paprika need time to develop their full flavor, otherwise the dish will be too spicy. ≈ 2 min
A variation on the hash recipe
- Return the ground beef to the pan over medium heat, stirring constantly, until it breaks down into small crumbles.
Vegetarian option
- Add the substitute ingredient later in the cooking process, but not as the very last step, so that it has time to absorb the flavors. ≈ 3 min
