These green plantains are first fried, then mashed, and then fried again until they are golden and crispy. They are perfectly complemented by a sambal made with tomatoes, onions, and chili peppers.

Directions

  1. Peel the bananas. ≈ 8 min
  2. Soak them in saltwater.
  3. Heat the oil and fry the bananas until they are slightly crispy.
  4. Remove them and drain them. ≈ 2 min
  5. When the bananas have ripened, mash them one at a time with a fork or a heavy object, as finely as possible.
  6. Repeat until all the bananas are gone. ≈ 3 min
  7. Warm up the oil paint.
  8. Fry the flattened bananas until they are golden brown.
  9. Remove them and drain them. ≈ 2 min
  10. Repeat until all the bananas are gone. ≈ 3 min
  11. For the sambal, roughly chop all the ingredients into strips. ≈ 8 min
  12. Heat the oil and fry the chopped ingredients until they are softened and crispy.
  13. Turn off the heat and let it cool.
  14. Once they are cold, pour them into a blender. ≈ 3 min
  15. After mixing, add the shrimp paste. ≈ 3 min
  16. Add salt and sugar to taste. ≈ 3 min
  17. Roughly combine all the ingredients. ≈ 4 min
  18. Warm up the cooking oil.
  19. Continue mixing until the mixture becomes crispy.
  20. Turn off the fire. ≈ 3 min
  21. Serve the bananas with the sambal. ≈ 2 min
