Baked sea bream on potatoes, cherry tomatoes, olives and pine nuts
Italian baked sea bream: a sea bream filled with herbs, garlic, and lemon, baked in the oven on a bed of apple and onion, with cherry tomatoes, taggiasche…
This simple dish, with its few ingredients, is primarily successful due to the quality of the fish. The white wine, poured around the fish rather than on top, helps to keep the sea bream tender during cooking.

Directions
- Rinse and clean the sea bream, season the inside with salt, and stuff it with a sprig of rosemary, a few slices of garlic, a pinch of marjoram, and 2 thin lemon slices. ≈ 10 min
- Slice the apples thinly, about 2-3 mm thick, and arrange them in a single layer on a baking sheet lined with parchment paper. Finely chop the onion and place it between the apple slices. ≈ 3 min
- Place the sea bream on this dish and cover it with 3 or 4 thin slices of lemon. ≈ 3 min
- Wash the cherry tomatoes, halve them, and arrange them around the fish. Sprinkle with pine nuts and olives, and add 2 bay leaves. ≈ 2 min
- Pour the white wine around the fish, without getting it wet, and bake in the oven at 180 °C for 20-30 minutes.
- During cooking, keep an eye on the moisture level: if needed, add a few spoonfuls of vegetable stock around the fish, never on top of it.
