Arambasici (Fermented Cabbage Rolls)
Arambasici are Croatian rolls of meat wrapped in sour cabbage, slow-cooked for a one-of-a-kind flavor.
Arambasici are a specialty of Sinj, Croatia. They are rolled in whole sour cabbage leaves, unlike other cabbage rolls that use fresh leaves.

Directions
- Mix the beef, ham, pork fat, pork and lamb in a bowl. ≈ 4 min
- Add the chopped onion, garlic, grated lemon zest, salt, bell pepper, a pinch of cinnamon, the crushed cloves and the nutmeg. ≈ 3 min
- Mix all the ingredients thoroughly. If you like, knead them by hand. ≈ 10 min
- Separate the leaves from the head of sour cabbage, setting aside the best ones for the filling. ≈ 2 min
- Cut away part of the stem at the base of the leaf. ≈ 8 min
- Add a tablespoon of the meat mixture to each sour cabbage leaf. ≈ 3 min
- Roll up the arambasici starting from the base of each leaf, and fold the ends together tightly so they don’t fall apart during cooking. ≈ 3 min
- Pour 1 tablespoon of fat into a deep ceramic dish. ≈ 3 min
- Pack the arambasici rolls snugly side by side in the baking dish. ≈ 3 min
- Add smoked meat between the layers of sour cabbage rolls. ≈ 3 min
- Pour the broth or water over the arambasici. Cover tightly and cook over low heat for 3 to 4 hours.
- Shake the casserole dish several times, but do not stir. ≈ 4 min
