Directions
- Remove the core from the apples using a specific tool, then peel them with a vegetable peeler. ≈ 8 min
- Cut the pulp into small pieces, and cook it with lemon juice and water until it thickens into a compote.
- Finally, add the cider (or apple wine), and let it simmer for another 10 minutes.
- Use a fine-mesh sieve (a more precise method) or grind it in a food processor. ≈ 3 min
- Prepare this mixture at least 3 hours in advance and allow it to cool in the refrigerator.
- Prepare the ice cream maker by chilling it.
- Pour in the ice cream mixture into the ice cream maker. ≈ 3 min
- Let the sorbet cool in the freezer for 3 hours.
