Directions
- Thoroughly rinse the glasses and lids, then rinse them carefully and place them upside down on a kitchen towel to drain. ≈ 2 min
- Sort the fruits. ≈ 3 min
- Remove any imperfections from the strawberries, let them drain in a sieve, remove the stems and calyxes, and cut the strawberries in half or into four pieces. ≈ 8 min
- Divide the fruit evenly among the glasses. ≈ 3 min
- Place the juice and pulp in a pot, add sugar, and heat over medium heat until the mixture thickens and caramelizes.
- As soon as the mixture thickens (approximately 2-3 minutes), remove the foam that forms several times with a spoon, and check if the mixture has the correct consistency.
- Once this is done, remove the pot from the heat, and if it’s not already, let the liquid simmer for a little longer.
- Pour each glass, pour the still-warm gel in completely, filling the glasses to the brim. ≈ 3 min
- Close the jars and place them, upside down, on a clean towel for about 30 minutes.
- Once cooled, store the glasses.
