This chutney combines cherries and apples with ginger, cinnamon, thyme, and green chili peppers. It is slowly simmered until it thickens, then bottled.

Directions

  1. Place all the ingredients in a pot and heat until the sugar is dissolved. Once the mixture comes to a boil, reduce the heat and simmer gently, covered, for 40 to 50 minutes.
  2. Towards the end, remove the lid and allow the excess liquid to evaporate so that the sauce thickens. ≈ 3 min
  3. Remove the bay leaf, let the sauce cool, then pour it into jars.
