Apple strudel is a specialty of Austria and the South Tyrol region, and is famous worldwide. The key to its success lies in the dough, which is hand-stretched on a cloth until it becomes almost translucent; store-bought puff pastry can also be used.

Directions

  1. If needed, prepare the strudel dough. ≈ 3 min
  2. Wash the grapes, drain them briefly, and soak them in apple juice.
  3. Line the baking sheet with parchment paper. ≈ 3 min
  4. Peel the apples, cut them into eight pieces, remove the core, finely dice them, and toss them with lemon juice to prevent them from browning. ≈ 8 min
  5. In a frying pan, heat 40g of butter and toast the breadcrumbs until golden brown.
  6. Mix the sugar and cinnamon together. ≈ 4 min
  7. Grease a large, clean sheet of parchment paper and spread the dough thinly over it. ≈ 4 min
  8. Gently lift it with your flour-dusted hands and stretch it outwards until it becomes translucent, then cut off the thick edges. ≈ 8 min
  9. Preheat the oven to 190 °C.
  10. Melt the remaining butter and use it to lightly coat the dough, reserving some for later.
  11. Sprinkle the golden breadcrumbs evenly over two-thirds of the dough, leaving a 3 cm space on the sides. ≈ 2 min
  12. Divide the apples, then the sugar and cinnamon mixture, cilantro, and drained grapes evenly. ≈ 3 min
  13. Brush the remaining dough with melted butter. ≈ 4 min
  14. Fold in the side edges and roll the strudel using a clean cloth to help it stay in shape. ≈ 10 min
  15. Place it on the plate, with the seam facing down, and then brush the remaining butter (or milk, or egg yolk) over the top. ≈ 4 min
  16. Cook for approximately 40 minutes, or until golden brown.
  17. Sprinkle the strudel with powdered sugar. ≈ 2 min
