Directions
- Peel the onion and slice it thinly. ≈ 8 min
- Heat the olive oil in a pan. Add the sliced onions and cook until they are golden brown and slightly caramelized.
- Add the tomato puree and simmer over low heat for 30 minutes. Then add the smoked bacon, ensuring it doesn’t burn, and continue to cook for another 15 minutes.
- Drain the spaghetti until al dente, then add them to the sauce. Mix well to combine. ≈ 4 min
- Fry the guanciale in a small amount of olive oil until it is crispy. Set aside. ≈ 3 min
- Add 1/3 of the pecorino cheese to the spaghetti and mix well, then add the bacon and the remaining pecorino cheese. ≈ 4 min
- Serve immediately, accompanied by grated Parmesan cheese. ≈ 2 min
