Directions
- Cut the guanciale into slices about 1 cm thick and place them in a cast-iron skillet, along with three tablespoons of olive oil.
- Keep frying the guanciale until it becomes crispy.
- Reduce the white wine until it has completely evaporated.
- Add the hot pepper and let it cook for a few minutes.
- Add the tomatoes, and at the same time, discard the pasta. ≈ 3 min
- Season with salt and a pinch of pepper. ≈ 2 min
- Drain the pasta, reserving a little of the starchy water, and then add it to the pan with the sauce.
- Let it simmer for about a minute, adding grated pecorino d’Amatrice.
- Serve each plate with a sprinkle of pecorino cheese from Amatrice. ≈ 2 min
