Directions
- Boil the water in a pot, add the almonds, and let them cook briefly. Strain the almonds to remove the skins, drain them, and arrange them on a baking sheet lined with paper towels.
- Remove the white skin from the almonds, and using a grater, grind the almonds into a fine powder.
- Mix the almonds with the powdered sugar. ≈ 4 min
- Whip the egg whites with a fork and gently fold in the walnut oil paint. ≈ 4 min
- Combine the almonds with the egg whites and place the mixture in the freezer for 20 minutes.
- Meanwhile, preheat the oven.
- Using wet hands, form walnut-sized balls of dough. ≈ 10 min
- Dust them with powdered sugar. ≈ 3 min
- Bake the amaretti cookies on the middle rack for 16 to 18 minutes (they should not be too browned).
- Let cool on a wire rack.
