Directions
- Heat the milk, then reduce the heat and add the saffron dissolved in the rose water.
- Next, we gradually add the sugar and honey, while constantly stirring with a spoon, until the sugar and honey are completely incorporated into the milk. ≈ 3 min
- Once the mixture has cooled, we pour it into a metal container (stainless steel) and place it in a container filled with crushed ice.
- We continue to stir until the ice mixture reaches a firm and creamy consistency. ≈ 3 min
- We place the mixture in the freezer for about 30 minutes, then remove it and re-churn it to achieve the desired consistency.
- You can add this cream to the ice cream in a bowl, and decorate it with a spoonful of raspberry syrup. ≈ 2 min
- Alternatively, you can simply add the cream in chunks as shown below. ≈ 3 min
- Spread the cream evenly over the bottom of a 2mm-thick mold using a metal or plastic spatula, then place the mold in the freezer or in an ice cube tray.
- Once the cream has set, remove it from the mold using a spatula and add it to the ice cream mixture. ≈ 3 min
- To serve, you can also use pistachio powder. ≈ 2 min
