Directions
- Heat a large, deep frying pan over medium heat. First, fry the bacon, then the pork belly. Remove them and set aside.
- Lightly grill the garlic and then crush it using a mortar and pestle.
- Gently pan-fry the liver, being careful not to overcook it. Set aside a few slices for garnish and chop the rest with the garlic (using a food processor will save time).
- Place the ground meat in a frying pan with the cooking oil and stir.
- Add the paprika and cook briefly until it browns. ≈ 3 min
- Pour the water into a pot, bring to a boil, then add pepper and cinnamon to taste.
- After a few minutes, add the crumbled bread and stir until the dough comes together and the oil rises to the surface. Add a pinch of saffron for color, if desired. ≈ 4 min
- Serve in a frying pan or in a earthenware dish, decorated with slices of liver, fried bacon, and pine nuts. In the past, it was often eaten inside hollowed-out bread crusts.
