Directions
- Cook the chicken, corn kernels, and the three varieties of apples in a moderate heat for about 1 hour, seasoning with onion, garlic, pepper, and salt.
- Cut the plantain into pieces to achieve the desired creamy texture. Before turning off the heat, add the guascas (which give the soup a green color and a distinctive flavor). Let it simmer for an additional 5 minutes. It is important to note that all the plantains must be peeled.
- Cut some of the chicken and serve it with the chicken carcass and corn. Add capers and sour cream if you like. ≈ 8 min
- Serve with avocado slices and rice. ≈ 2 min
- Cilantro adds a delicious touch. Finely chop it and serve it at the table so that everyone can add it to their liking. ≈ 8 min
