Directions
- In a large pan, sauté the chopped peppers in a tablespoon of olive oil until they are softened.
- Add the chopped onion and garlic, and let them just start to brown. ≈ 3 min
- Place the tomatoes in boiling water, then peel them and cut them into pieces.
- Pour the tomatoes into the pan and add a teaspoon of Espelette pepper.
- Let it simmer over low heat for about 15 minutes.
- Crack the eggs into a bowl with a pinch of salt, then pour them into the pan.
- Mix well and cook, stirring frequently, until the eggs are set but still slightly soft.
