Directions
- First, you’ll need a large eggplant. Peel it, cut it into small cubes, and then cook it in a pot with water, chicken or meat broth, enough to cover the eggplant. Let it simmer, covered, for about 5 minutes.
- We strain the broth, keeping the liquid.
- Add it to the blender with a medium-sized onion, 2 tablespoons of powdered milk, and a handful of spinach that has been thoroughly washed. ≈ 3 min
- If the broth has not been cooked with broth, add a chicken bouillon cube and enough broth or water so that the blender can properly mix the ingredients.
- Salt is added to taste. ≈ 3 min
- Mix all the ingredients together, then filter the mixture. ≈ 4 min
- In a saucepan, melt the butter over low heat for 10 minutes.
- Another option is to sauté the onion in the butter, then add the remaining ingredients after you have blended and strained the rest. ≈ 3 min
- Serve it hot, and if you like, you can add some cheese to it. ≈ 2 min
