Baked casserole with hot sauce
A white meat stew, cooked with white wine and cream, and topped with cheese in individual ramekins: ideal for using up leftover roast meat.
This stew gives a new life to pre-cooked white meat. The pieces are coated in butter, simmered in a broth, bound with egg yolks, white wine, and cream, and then baked with cheese. A comforting dish for four people, enhanced with a squeeze of lemon.

Directions
- Cut the meat into small pieces. ≈ 8 min
- Have them come back to the center after 3 minutes.
- Add the flour. ≈ 3 min
- Stir everything quickly. ≈ 4 min
- Pour in the very hot broth.
- Mix well and cook for 5 minutes.
- Stop cooking. ≈ 3 min
- Whisk the egg yolks with the white wine and heavy cream. ≈ 4 min
- Pour this mixture over the stew. ≈ 3 min
- Season generously with salt and pepper. ≈ 2 min
- Divide the stew evenly among four small oven-safe dishes.
- Sprinkle with grated cheese. ≈ 3 min
- Bake for 15 minutes in a preheated oven at 220-240 °C.
- Finish the stew with lemon juice and Worcestershire sauce. ≈ 3 min
