Directions
- Pour the the white wine into a stainless steel pot, adding the lemon juice and finely chopped onions. ≈ 3 min
- Cook this mixture until it reduces to about 30 ml. Don’t worry if the sauce is too thick; it will thin out when mixed with the butter.
- Reduce the heat to low. If you want to thicken your sauce, add the heavy cream at this point, but every traditional French chef would disagree.
- Begin by adding cold, cubed butter while whisking vigorously. The sauce should not exceed 95 °C, so turn off the heat and continue whisking. Add 1 or 2 cubes of butter and continue adding until all the butter is incorporated. ≈ 4 min
- Season with salt and white pepper, and serve immediately. The sauce can be stored in an airtight container, but this method is not recommended for long-term storage. ≈ 2 min
